Crockpot Chicken Fajitas Create a Great Low Stress Meal
I created my crockpot chicken fajitas out of time or a perceived lack thereof. We started homeschooling our older children this fall, and because of this, I must be smart with my time.
On top of this, we added a new baby to the family in September. If I don’t meal plan and prepare ahead of time, dinner happens way too late.
One of our family favorites is Mexican food. My kids especially love when I make my crockpot chicken fajitas because it makes the house smell heavenly for hours.
I love to make this recipe in my crockpot, because it means I am not stressing or feeling frustrated at dinner time. Plus it is easy clean up just one pot.

Easy Crockpot Chicken Fajitas
Ingredients
- 1.5 lbs chicken breasts
- 1 medium onion diced
- 1 bell pepper any color diced
- 4 garlic cloves minced
- 1/2 cup filtered water
- 1 Tbsp lime juice
- 2 Tbsp cumin
- 1.5 Tbsp chili powder
- 15 oz can of organic diced tomatoes
Instructions
- Simply combine the ingredients within your slow cooker.
- Cook on low for 4 hours if chicken is thawed, otherwise 4 hours on high if chicken is frozen. Adjust time and cook setting depending on your schedule.
