I LOVE pancakes, I LOVE cheese and the two put together are like Heaven on Earth. When we changed over to a gluten free diet I got pretty good at making homemade bread in the slow cooker. The problem is my kids are not big fans of bread, but they LOVE pancakes. Rather than take the time to make bread all the time for a quick sandwich here and there for lunch or on the run I use pancakes a lot instead.
A Gluten Free Fix for Bread
Using pancakes is not only sometimes easier for me because I can make a huge batch and freeze some to use later, but my kids eat every morsel of it, unlike the bread there they refused to eat the crusts outer parts. Making grilled cheese pancakes is very simple you make pancakes. I always try to not make them too brown on one side so that when I go to cook them again they do not get all hard and burnt. Once you have your pancakes made I take a little butter to put on the outside like you would a piece of bread and then slap some cheese in the middle on medium to low heat and put a lid over the skillet to speed up the melting of the cheese. This works really well and while they might not be the healthiest for mom, my kids LOVE them. They beg for them and not only grilled cheese, but they love peanut butter and jelly pancakes too.
